1.Preheat oven to 325. Grease 10-inch round cake pan.
2. In a large bowl, beat the vegetable oil and sugar until thick and opaque. Add the eggs, one at a time, beating well after each addition.
3. sift together the all purpose flour, cloves, cinnamon, mace, baking soda and salt, and stir in the whole wheat flour. Add to the oil and egg mixture and mix until well blended.
4. Add the walnuts, apple chunks and calvados all at once and stir the batter until the pieces are evenly distibuted.
5. Pour batter into prepared pan. Bake until a cake tester inserted into the center comes out clean, about an hour and fifteen minutes.
6. Let the cake rest for 10 minutes then unmold and pour the glaze over the warm cake, or cut the cake and pour the glaze over the slices.
Apple Cider Glaze (for Chunky Apple walnut Cake)'
3. Ingredients:
'one-half stick (4 tbs) of butter
2 tbs of brown sugar
6 tbs of granulated sugar
3 tbs calvados or applejack
4 tbs sweet cider
2 tbs fresh orange juice
2 tbs heavy cream
'
4. Directions:
'1. melt the butter in a saucepan over low heat and stir in both sugars.
2. Add the remaining ingredients, stir, raise the heat, and bring to a boil. Reduce the heat slightly and cook for 4 minutes.
3. Remove from heat and cool slightly. Pour while still warm over the warm cake'
