Chocolate Peanut Biscotti

Ingredients:

4 oz. chocolate chips

1 cup sugar

1/3 cup cocoa

2 cups flour

1 teaspoon baking powder

1/4 teaspoon salt

3 whole eggs

1/3 cup peanuts (roasted, unsalted)

Optional:  1 Tbsp Hot water and 2 tsp instant espresso coffee

     
Directions:

Preheat oven to 350 degrees.

Blend in food processor chocolate chips, sugar and cocoa until fine.

Sift together sugar, choc chip mixture with flour, baking powder and salt. Put in mixer and mix with lightly beaten eggs. Stir in hot water and coffee along with nuts until dough is smooth.

Using floured hands, scoop 1/2 the dough onto 1 side of a coated cookie sheet.  Shape into a 15 inch log.  Do the same with other half.  Bake at 25 - 30 minutes for soft biscotti.  Cut log on a diagnol line.
