Charcoal Grilled Pork Chops

Ingredients:

¾ cup kosher salt or 6 tablespoons table salt

6 tablespoons sugar

4 pork chops about 11/2 inches thick. I prefer no bone.

1 recipe spice rub

Basic Spice Rub for Pork Chops

 

Makes ¼ cup. Enough for 4 chops.

 

1 tablespoon ground cumin

1 tablespoon chili powder

1 tablespoon curry powder

1 teaspoon ground black pepper

2 teaspoons brown sugar

 

Combine all ingredients in a small bowl.

   
Directions:

Dissolve salt and sugar in 3 quarts cold water.

Add chops and refrigerate for one hour

Dry chops thoroughly with paper towels.

Coat chops with spice rub.

 

Light grill and turn all burners on high. Close cover for 15 minutes.

Turn off center burner. Place chops on center burner (indirect method).

Cook until browned on each side. 3 to 4 minutes per side.

Continue cooking for about 7 more minutes until 135-145 internal temperature.

 

Great to make ahead.

I soak pork chops the night before.

Coat chops with spice rub and place them in the refrigerator

overnight.
