Bruschetta with Olive Paste, Peppers and Goat Cheese

Ingredients:

8 small red peppers

32 4x2x1/2 inch slices country bread

Olive Oil

40 tsp Olivada olive paste

16 oz soft fresh goat cheese crumbled

pepper

fresh parsley

   
Directions:

Char red bell peppers over gas flame or in broiler until blackened.  Seal roasted peppers in paper bag and set aside 10 minutes.  Cut into 1/2 inch strips.

Preheat broiler, spread olive oil lightly on both sides of bread.  Grill bread until golden brown, about 2 minutes on each side.  Spread one side of each bread slice with 1 generous teaspoon olivada. Top with bell peppers, then cheese.  Season with pepper.  Sprinkle with parsley.
